  • 2.0 large chicken breasts, boneless and skinless
  • 1.0 teaspoon garlic powder
  • 1.0 teaspoon onion powder
  • 1.0 teaspoon smoked paprika
  • 1.0 teaspoon Italian seasoning
  • 1.0 to taste salt
  • 1.0 to taste pepper
  • 1.0 tablespoon olive oil
  • 4.0 large flour tortillas
  • 1.0 cup shredded mozzarella cheese
  • 1.0 cup shredded cheddar cheese
  • 1.0 cup baby spinach
  • 0.5 cup diced tomatoes
  • 0.25 cup sliced black olives
  • 0.25 cup ranch dressing

Instructions
 

  • Prepare the Chicken: Start by seasoning the chicken breasts with garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper. Make sure to rub the spices evenly on both sides.
  • Marinate: In a separate bowl or a resealable bag, combine the seasoned chicken with olive oil. Let it marinate for at least 30 minutes to allow the flavors to infuse.
  • Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Grill the chicken for about 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F. Remove from the grill and let it rest for a few minutes.
  • Shred the Chicken: Once the grilled chicken has cooled slightly, shred it using two forks or chop it into bite-sized pieces.
  • Assemble the Wraps: On each flour tortilla, layer the following: a generous portion of shredded chicken, followed by mozzarella cheese, cheddar cheese, baby spinach, diced tomatoes, and sliced black olives if using.
  • Wrap It Up: Fold the sides of the tortilla over the filling and then roll the tortilla tightly from the bottom up to create a wrap.
  • Grill the Wraps: Lightly coat the grill or a grill pan with non-stick spray or oil. Place the wraps seam-side down and grill for about 2-3 minutes on each side, until the tortillas are golden brown and the cheese is melty.
  • Cut and Serve: Remove the wraps from the grill, let them cool for a minute, then slice each wrap in half. Serve with ranch dressing or your desired dipping sauce on the side.
