Ingredients

1 ¾ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

2 tsp ground cinnamon

1 tsp ground nutmeg

½ tsp ground ginger

½ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 cup canned pumpkin puree

½ cup buttermilk

1 tsp pure vanilla extract

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.

Cream Butter and Sugars: In a large bowl, using an electric mixer, cream the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 3-4 minutes.

Add Eggs and Pumpkin: Add the eggs one at a time, beating well after each addition. Then, mix in the pumpkin puree and vanilla extract until just combined.

Combine Mixtures: Gradually add the dry ingredient mixture to the pumpkin mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined. Do not overmix.

Pour and Bake: Pour the batter into the prepared baking pan, smoothing out the top with a spatula if necessary. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Serve: Once cooled, you can serve it plain, dust it with powdered sugar, or top it with cream cheese frosting for an extra treat!
