1 lb ground beef

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

10 medium corn tortillas

1 can (10 oz) red enchilada sauce

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Beef Mixture: In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 5-7 minutes. Drain excess fat if needed.

      Add Seasonings: Stir in the minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. Cook for another minute until fragrant.

        Incorporate the Beans and Corn: Add the black beans and corn to the skillet with the beef mixture. Mix well and remove from heat.

          Prepare the Tortillas: Warm the tortillas in the microwave for about 30 seconds to make them pliable. This will help prevent them from tearing when you fill them.

            Assemble the Enchiladas: In each tortilla, place about a 1/4 cup of the beef mixture, and sprinkle with a bit of shredded cheddar. Roll the tortilla tightly and place seam-side down in a 9x13 inch baking dish. Repeat with all tortillas.
