1 cup Medjool dates, pitted and chopped

1/2 cup unsweetened cocoa powder

1/2 cup almond flour

1/2 cup walnuts, chopped (optional)

1/4 cup coconut oil, melted

1/4 cup maple syrup

2 large eggs

1 tsp vanilla extract

1/4 tsp sea salt

1/2 tsp baking powder

1/2 cup dark chocolate chips (dairy-free if needed)

Optional: shredded coconut for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the Dates: If your dates are tough, soak them in warm water for about 10 minutes to soften. Drain and chop them finely.

      Mix Dry Ingredients: In a medium bowl, combine the cocoa powder, almond flour, sea salt, and baking powder. Whisk until well blended.

        Combine Wet Ingredients: In a large mixing bowl, add the chopped dates, melted coconut oil, maple syrup, eggs, and vanilla extract. Use a fork or electric mixer to blend until smooth.

          Combine Wet & Dry: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Gently fold in the dark chocolate chips and walnuts if you’re using them.

            Bake the Brownies: Pour the brownie batter into the prepared baking dish and spread it evenly. If desired, sprinkle shredded coconut on top for added texture.

              Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).

                Cool & Serve: Allow the brownies to cool in the pan for about 10 minutes, then lift them out using the parchment paper overhang. Cool completely on a wire rack before cutting into squares.

                  Enjoy: Serve as is, or top with a scoop of your favorite ice cream or a dollop of whipped cream for an extra decadent treat!
