Ingredients

1 cup Medjool dates, pitted and roughly chopped

1/2 cup almond butter (or any nut butter of your choice)

1/2 cup unsweetened cocoa powder

1/4 cup maple syrup or honey (optional, for extra sweetness)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup dark chocolate chips (dairy-free if needed)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup shredded coconut (for topping, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

Blend the Dates: In a food processor, combine the chopped Medjool dates along with the almond butter, cocoa powder, maple syrup (if using), vanilla extract, salt, and baking powder. Blend until you achieve a smooth and thick batter. Scrape down the sides as necessary to ensure all ingredients are well incorporated.

Add Mix-Ins: Once the mixture is smooth, fold in the dark chocolate chips and the chopped nuts (if using). This adds extra texture and bite to your brownies.

Transfer to Baking Dish: Spoon the brownie mixture carefully into the prepared baking dish. Use a spatula to spread it evenly, smoothing the top as best as you can.

Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

Cool: Once baked, remove the brownies from the oven. Let them cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.

Slice and Serve: Once cooled, slice the brownies into squares. If desired, sprinkle shredded coconut on top for an added touch.

Enjoy: Serve these decadent date brownies as a healthy snack or dessert. They can be stored in an airtight container at room temperature for up to a week.
