Ingredients
  

1 medium cucumber, thinly sliced

1 large lemon, juiced and sliced

2 tablespoons chia seeds

4 cups filtered water

1-2 tablespoons honey or agave syrup (optional)

A few fresh mint leaves (optional, for garnish)

Instructions
 

Start by rinsing the cucumber and lemon under cool water. Slice the cucumber into thin rounds and slice the lemon into wedges or rounds, depending on your preference.

    In a large pitcher, combine the sliced cucumber and lemon. Mash them lightly with a wooden spoon to release their flavors.

      Add the chia seeds to the pitcher. If desired, stir in honey or agave syrup for a touch of sweetness.

        Pour the 4 cups of filtered water over the cucumber, lemon, and chia seed mixture. Stir everything together with a spoon.

          Allow the mixture to sit for at least 30 minutes at room temperature or in the refrigerator for 1-2 hours. This will let the flavors meld and the chia seeds will swell, creating a delightful texture.

            Once ready, pour the chilled Cucumber Lemon Chia Water into glasses, and garnish with fresh mint leaves if using.
