1 large head of green cabbage (e.g., Savoy or Napa)

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cucumber, julienned

1 cup red cabbage, shredded

½ cup fresh cilantro, chopped

½ cup green onions, finely chopped

1 cup cooked chicken breast, shredded (or tofu for a vegetarian option)

For the Peanut Sauce:

½ cup creamy peanut butter

3 tablespoons soy sauce or tamari

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon fresh lime juice

1 teaspoon sesame oil

1 tablespoon sriracha (adjust based on spice preference)

Water to thin (if needed)

Instructions
 

Prepare the Peanut Sauce: In a medium bowl, combine the peanut butter, soy sauce, honey, rice vinegar, lime juice, sesame oil, and sriracha. Whisk until smooth. If the sauce is too thick, gradually add water until you reach your desired consistency. Set aside.

    Prepare the Cabbage Leaves: Carefully remove 8-10 whole leaves from the cabbage head. Blanch them in boiling water for about 30 seconds, just until they become more pliable. Remove from the water and set aside to cool.

      Chop the Vegetables: In a large mixing bowl, combine shredded carrots, red bell pepper, cucumber, red cabbage, cilantro, green onions, and shredded chicken (or tofu). Toss everything together until well mixed.

        Assemble the Wraps: Take one cabbage leaf and lay it flat on a clean surface. Spoon a generous portion of the vegetable and chicken mixture onto the center. Drizzle with a tablespoon of the peanut sauce, then fold the sides of the cabbage leaf inward and roll tightly from the bottom up. Repeat with the remaining cabbage leaves.

          Serve: Place the wraps on a platter. Serve them with extra peanut sauce on the side for dipping. Optionally, garnish with crushed peanuts and additional cilantro for added crunch and flavor.
