Crunchy Sesame Tofu Salad

Ingredients
  

1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons sesame oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon honey or maple syrup

1 tablespoon cornstarch

2 tablespoons sesame seeds (white and black for variety)

4 cups mixed salad greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1 red bell pepper, julienned

1 avocado, sliced

¼ cup green onions, chopped

¼ cup cilantro, roughly chopped

1 tablespoon toasted peanuts (optional for extra crunch)

Instructions
 

Prepare the Tofu:

    - Press the tofu to remove excess moisture if not already done. Cut the tofu into bite-sized cubes.

      - In a mixing bowl, combine sesame oil, soy sauce, rice vinegar, honey or maple syrup. Add the cubed tofu and gently toss to coat. Let it marinate for about 15 minutes.

        Coat and Cook:

          - Preheat the oven to 400°F (200°C).

            - After marinating, sprinkle cornstarch over the tofu cubes and toss until evenly coated.

              - Spread the tofu on a baking sheet and bake for 25-30 minutes, or until golden and crispy, flipping halfway through.

                Toast the Sesame Seeds:

                  - While the tofu is baking, in a small dry skillet over medium heat, add the sesame seeds and toast them lightly for 3-5 minutes until golden brown. Stir frequently to avoid burning. Remove and set aside.

                    Prepare the Salad:

                      - In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red bell pepper, sliced avocado, green onions, and cilantro.

                        Assemble the Salad:

                          - When the tofu is done baking, let it cool for a few minutes. Add the crispy tofu to the salad mixture and sprinkle the toasted sesame seeds on top.

                            - Drizzle with extra sesame oil or your choice of dressing if desired, and gently toss to combine.

                              Serve:

                                - Garnish with toasted peanuts if using, and serve immediately as a delightful main or a refreshing side salad!
