1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon chili powder (adjust for spice)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Optional: 1 tablespoon nutritional yeast (for a cheesy flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, pat them dry with a kitchen towel. Ensuring they are dry helps achieve maximum crunchiness.

      Season the Chickpeas: In a large bowl, combine the olive oil, smoked paprika, garlic powder, cumin, chili powder, sea salt, black pepper, and nutritional yeast if using. Add the dried chickpeas and toss well until they are evenly coated with the seasoning mix.

        Spread on Baking Sheet: Pour the seasoned chickpeas onto the prepared baking sheet in a single layer, ensuring they’re not overcrowded for even roasting.

          Roast: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, stirring halfway through to promote even cooking. They should be golden brown and crispy.

            Cool: Once roasted, remove from the oven and let the chickpeas cool for a few minutes before serving. They will continue to get crispier as they cool.

              Store: If you have leftovers (which is rare!), store them in an airtight container at room temperature for up to 3 days.
