Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or plant-based milk with 1 tablespoon vinegar)

1 cup breadcrumbs (Panko for extra crunch)

1 tablespoon ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Ensure they are similar in size for even cooking.

Make the Dipping Batter: In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly add the buttermilk until you achieve a smooth batter.

Prep the Breadcrumb Mixture: In another bowl, combine the breadcrumbs with the ranch seasoning mix. Mix well to evenly distribute the seasoning.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off, then roll it in the breadcrumb mixture until fully coated. Place the coated florets onto the prepared baking sheet.

Bake: Once all of the cauliflower bites are coated, lightly spray them with cooking spray or drizzle with olive oil for extra crispiness. Bake in the preheated oven for about 20-25 minutes, or until the florets are golden brown and crunchy. Flip them halfway through for even cooking.

Garnish and Serve: Once out of the oven, sprinkle with fresh chopped parsley. Serve hot, paired with your favorite ranch dipping sauce or yogurt-based sauce for a refreshing twist.
