2 large cucumbers

1 cup sushi rice

1 1/4 cups water

3 tablespoons rice vinegar

1 tablespoon sugar

1/2 teaspoon salt

1/2 cup shredded carrots

1/2 cup diced bell peppers (red, yellow or both)

1/4 cup fresh chives or green onions, chopped

1 avocado, sliced

2 tablespoons sesame seeds

Soy sauce and pickled ginger, for serving

Instructions
 

Prepare Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.

    Season the Rice: In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fluff it gently with a fork and mix in the vinegar mixture. Allow the rice to cool to room temperature.

      Prepare the Cucumber: While the rice cools, slice each cucumber in half lengthwise and scoop out the seeds using a melon baller or a spoon, creating a hollow center. This will help hold the filling and make for easy eating.

        Fill with Sushi Rice: Once the rice has cooled, use a spoon to fill each cucumber half with a layer of sushi rice, packing it gently but firmly.

          Add the Vegetables: Top the rice with shredded carrots, diced bell peppers, and chopped chives. For a creamy texture, add a few slices of avocado on top.
