8 rice paper wrappers

1 large carrot, julienned

1 medium cucumber, julienned

1 red bell pepper, thinly sliced

1 avocado, sliced

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 cup vermicelli noodles (cooked and cooled)

½ cup hoisin sauce (for dipping)

1 tablespoon sesame seeds (optional for garnish)

Instructions
 

Prepare the Ingredients: Start by julienning the carrot and cucumber. Slice the red bell pepper and avocado. Cook and cool the vermicelli noodles as per package instructions.

    Soak Rice Paper Wrappers: Fill a shallow dish with warm water. One by one, dip each rice paper wrapper in the warm water for about 10-15 seconds or until it becomes pliable. Lay it flat on a clean, damp surface.

      Assemble the Spring Rolls: On the lower third of the rice paper wrap, arrange a small amount of each filling: a few strands of vermicelli noodles, julienned carrot, cucumber, bell pepper slices, avocado, and a few mint and cilantro leaves.

        Roll It Up: Start by folding the bottom of the wrapper over the filling. Then, fold the sides in and roll tightly until sealed. Repeat this process for the remaining wrappers and ingredients.

          Serve: Place the spring rolls on a serving platter. Drizzle with sesame seeds if using. Serve with hoisin sauce on the side for dipping.
