1 cup green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 cup carrots, julienned

1/2 cup red bell pepper, thinly sliced

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup sliced almonds or cashews

2 tablespoons sesame seeds

1/2 cup cooked protein of choice (tofu, chicken, shrimp)

4 large lettuce leaves (romaine or butter lettuce)

For the Dressing:

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup (for vegan)

1 teaspoon grated ginger

1 clove garlic, minced

1 tablespoon sriracha (optional, for heat)

Instructions
 

Prepare the Slaw: In a large bowl, combine the green cabbage, red cabbage, carrots, red bell pepper, green onions, fresh cilantro, and nuts. Toss to mix evenly.

    Make the Dressing: In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), grated ginger, minced garlic, and sriracha (if using) until well combined.

      Combine Dressing and Slaw: Pour the dressing over the slaw mixture. Toss thoroughly until the vegetables are well coated in the dressing. Allow it to sit for about 10 minutes for the flavors to meld.

        Assemble the Wraps: Lay a lettuce leaf flat on a plate. Spoon a generous amount of the slaw mixture into the center of the leaf. Top with a portion of cooked protein if desired, and sprinkle with sesame seeds for an extra crunch.
