1 cup raw almonds

1 cup unsweetened shredded coconut

2 tablespoons coconut oil, melted

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup sunflower seeds (optional)

1/4 cup mini dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Blend Almonds: In a food processor, add the raw almonds and pulse until they are finely chopped but still a little chunky (do not turn into almond butter).

      Mix Ingredients: In a large mixing bowl, combine the chopped almonds, shredded coconut, melted coconut oil, honey or maple syrup, vanilla extract, and salt. Stir until all ingredients are well incorporated. If desired, add in the sunflower seeds and dark chocolate chips for extra texture and flavor.

        Shape the Bites: Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.

          Bake: Bake in the preheated oven for 10-12 minutes, or until the bites are golden brown. Keep an eye on them to avoid overbaking.

            Cool Down: Once baked, remove from the oven and allow them to cool on the baking sheet for about 5 minutes. Then transfer the bites to a wire rack to cool completely.

              Store or Serve: Enjoy immediately or store in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
