Crockpot Spaghetti with Hatch Peppers

1 lb spaghetti

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

1 medium onion, diced

2-3 Hatch green peppers, roasted, peeled, and chopped

3 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (adjust to taste)

2 cups vegetable broth or water

1 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Prepare the Hatch Peppers: If you haven't done so, roast the Hatch peppers under a broiler until the skin is blistered. Place them in a paper bag to steam for about 10 minutes, then peel off the skin, seed, and chop them.

    Sauté the Vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute, until fragrant.

      Combine Ingredients in Crockpot: In a 6-quart crockpot, combine the sautéed onion and garlic mixture, crushed tomatoes, tomato sauce, chopped Hatch peppers, oregano, basil, red pepper flakes, and vegetable broth (or water). Stir to combine well.

        Add Spaghetti: Break the spaghetti in half and gently stir it into the sauce mixture in the crockpot, ensuring the noodles are submerged in the sauce. (You can also add the uncooked spaghetti in the last hour of cooking for al dente texture.)

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. If cooking on high, you may want to stir in the spaghetti during the last hour to prevent it from getting too soft.

            Season and Serve: Once cooked, taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.
