Crockpot Marry Me Chicken Soup

1.5 lbs boneless skinless chicken thighs

1 cup diced onions

2 cloves garlic, minced

3 cups low-sodium chicken broth

1 cup carrots, diced

1 cup celery, diced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and black pepper to taste

2 cups fresh spinach or kale, chopped

1/4 cup fresh parsley, chopped (for garnish)

Juice of 1 lemon

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt and black pepper. Place them at the bottom of the crockpot.

    Add Vegetables: Layer the diced onions, carrots, celery, and minced garlic over the chicken.

      Pour in the Broth: Add the chicken broth and canned diced tomatoes (including their juices) into the crockpot, ensuring the chicken is mostly submerged.

        Season: Sprinkle the dried thyme, dried oregano, and crushed red pepper flakes over the mixture. Stir gently to combine all the ingredients.

          Slow Cook: Cover the crockpot with its lid and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is tender and easily shredded with a fork.

            Shred the Chicken: Once cooked, carefully remove the chicken thighs and shred them using two forks. Return the shredded chicken to the pot.

              Add Cream & Greens: Stir in the heavy cream and chopped spinach (or kale) into the soup. Allow it to simmer for an additional 20-30 minutes on low, until the greens are wilted and the soup is heated through.

                Finish with Lemon: Just before serving, squeeze in the juice of one lemon and stir well. Adjust seasoning with more salt and pepper if desired.
