Ingredients

4 boneless, skinless chicken breasts

2 large sweet onions, thinly sliced

4 cloves garlic, minced

1 cup low-sodium chicken broth

1/2 cup dry white wine (or additional broth for a non-alcoholic version)

2 teaspoons balsamic vinegar

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 cup shredded Gruyère cheese (or Swiss cheese)

1/4 cup fresh parsley, chopped (for garnish)

1 tablespoon olive oil

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Sauté Onions: In a skillet over medium heat, add olive oil. Once hot, add sliced onions and cook, stirring frequently, until they are caramelized (about 15-20 minutes). Add minced garlic for the last minute of cooking.

Combine Broth and Seasonings: In a bowl, mix the chicken broth, white wine, balsamic vinegar, Worcestershire sauce, dried thyme, dried rosemary, and a pinch of black pepper. Stir well to combine.

Layer Ingredients in the Crockpot: Place the sautéed onions and garlic at the bottom of the crockpot. Arrange the seasoned chicken breasts on top of the onions.

Pour the Broth Mixture: Carefully pour the broth mixture over the chicken breasts, ensuring they are mostly covered with the liquid.

Cook: Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.

Add Cheese: About 30 minutes before serving, sprinkle the shredded Gruyère cheese over the top of the chicken. Cover again and allow the cheese to melt.

Finish and Garnish: Once done, give everything a gentle stir to mix the melted cheese into the sauce. Garnish with fresh parsley before serving.

Serve: Enjoy your French Onion Chicken over toasted baguette slices or on a bed of creamy mashed potatoes to soak up all the delicious sauce!
