Crockpot Creamy Spinach Artichoke Chicken

4 boneless, skinless chicken breasts

1 cup canned artichoke hearts, drained and chopped

1 cup fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup cream cheese, softened

1 cup sour cream

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 tablespoon olive oil

Optional: Fresh parsley, chopped for garnish

Prep the Chicken: In a large bowl, season the chicken breasts with salt, pepper, and Italian seasoning. For added flavor, drizzle with olive oil and rub the spices evenly.

    Make the Creamy Mixture: In another bowl, combine the softened cream cheese, sour cream, minced garlic, chopped artichoke hearts, spinach, Parmesan cheese, and half of the mozzarella cheese. Mix well until combined and creamy.

      Layer in the Crockpot: Place the seasoned chicken breasts at the bottom of the crockpot. Spoon the cream cheese mixture evenly over the chicken, covering it completely.

        Slow Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

          Add the Remaining Cheese: About 30 minutes before serving, sprinkle the remaining mozzarella cheese on top of the creamy mixture. Cover and allow the cheese to melt into the delicious mixture.

            Serve: Once done, gently shred the chicken right in the crockpot using two forks, and stir everything together to combine. Serve warm over rice, pasta, or with crusty bread. Garnish with fresh parsley if desired.
