Crockpot Cheesy Veggie Chili

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 carrots, chopped

2 celery stalks, chopped

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup vegetable broth

1 cup shredded cheddar cheese (or non-dairy cheese)

Optional toppings: sour cream, avocado, cilantro, or additional cheese

Instructions
 

Prep the Veggies: Begin by preparing your vegetables. Dice the onion, bell pepper, chop the carrots and celery, and mince the garlic.

    Combine Ingredients: In a large crockpot, combine the black beans, kidney beans, corn, diced tomatoes (with juices), onion, garlic, bell pepper, carrots, and celery.

      Add Spices: Sprinkle the chili powder, cumin, smoked paprika, salt, and black pepper over the mixture. Stir everything well to ensure the spices are evenly distributed.

        Pour in Broth: Pour the vegetable broth over the mixture and give it one last stir.
