Crockpot BBQ Beef Sandwiches

3-4 lbs beef chuck roast

1 large onion, sliced

4 cloves garlic, minced

1 cup beef broth

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

2 teaspoons smoked paprika

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon cayenne pepper (optional, for spice)

8 hamburger buns

Coleslaw (for topping, optional)

Instructions
 

Prepare the Beef: Begin by trimming any excess fat from the beef chuck roast. Cut it into large chunks (about 3-4 pieces) to ensure even cooking.

    Sauté Aromatics: In a skillet over medium heat, add a splash of oil and sauté the sliced onions until they become translucent (about 5 minutes). Stir in the minced garlic and sauté for another 1-2 minutes until fragrant.

      Layer the Ingredients in the Crockpot: Place the beef chunks at the bottom of the crockpot. Add the sautéed onions and garlic on top. Pour in the beef broth, BBQ sauce, Worcestershire sauce, and apple cider vinegar. Sprinkle the smoked paprika, black pepper, salt, onion powder, garlic powder, and cayenne pepper over everything.

        Cook: Cover the crockpot with the lid and set it to low for 8 hours or high for 4 hours. The beef is done when it's tender and easily shreds with a fork.

          Shred the Beef: Once cooked, remove the beef from the crockpot and place it on a cutting board. Use two forks to shred the beef into bite-sized pieces. Return the shredded beef back into the crockpot and stir it well to coat it in the delicious juices.
