Crock Pot Beef Tips and Gravy

2 lbs beef stew meat, cubed

1 medium onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional, substitute with more broth if desired)

1 packet brown gravy mix

1 tablespoon Worcestershire sauce

2 tablespoons soy sauce

2 teaspoons onion powder

2 teaspoons garlic powder

1 teaspoon dried thyme

1 teaspoon black pepper

1 tablespoon olive oil

Salt to taste

1 tablespoon cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the cubed beef stew meat in batches (to avoid overcrowding) and sear until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: In a crock pot, add the browned beef, sautéed onions, and garlic. In a separate bowl, whisk together the beef broth, red wine, brown gravy mix, Worcestershire sauce, soy sauce, onion powder, garlic powder, thyme, and black pepper.

        Pour and Stir: Pour this mixture over the beef in the crock pot, stirring to ensure all the beef is well coated. Add salt to taste.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.

            Thicken Gravy (Optional): If you prefer a thicker gravy, mix the cornstarch with a little water to create a slurry and stir it into the crock pot about 30 minutes before serving.

              Serve: Once done, taste and adjust seasoning if necessary. Serve the beef tips and gravy over mashed potatoes, rice, or noodles, and garnish with fresh parsley.
