2 medium zucchinis, grated (about 2 cups)

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup cornmeal

1/2 teaspoon baking powder

1 large egg, beaten

1/4 cup grated Parmesan cheese (optional for added flavor)

2 green onions, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano (or fresh, if available)

1/2 teaspoon black pepper

Oil for frying (vegetable or olive oil)

Prepare the Zucchini: In a large bowl, mix the grated zucchini with the salt. Allow it to sit for about 10 minutes. This step helps to draw out excess moisture.

    Remove Water: After 10 minutes, take a clean kitchen towel or cheesecloth, and scoop up the salted zucchini. Squeeze out as much liquid as possible, ensuring the mixture is dry.

      Combine Ingredients: In the same bowl you used for the zucchini, add the flour, cornmeal, baking powder, beaten egg, cheese (if using), green onions, garlic, oregano, and black pepper. Mix until just combined.

        Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. You can test the oil's readiness by dropping a small spoonful of the mixture into the pan; it should sizzle immediately.
