Crispy Teriyaki Chicken Bites

1 lb (450g) chicken breast, cut into bite-sized cubes

1 cup all-purpose flour

1/2 cup cornstarch

2 large eggs, beaten

1 cup Panko breadcrumbs

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

Oil, for frying

For the Teriyaki Sauce:

1/2 cup soy sauce

1/4 cup honey or brown sugar

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon minced ginger

2 cloves garlic, minced

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

Sesame seeds, for garnish

Sliced green onions, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine chicken cubes with salt, pepper, garlic powder, and onion powder. Let it marinate for at least 30 minutes for better flavor.

    Prepare Breading Stations: Set up three bowls: one with flour, one with beaten eggs, and one with Panko breadcrumbs.

      Bread the Chicken: Dredge each chicken cube in flour, shaking off excess. Dip it in the beaten egg, allowing any excess to drip off, then coat thoroughly with Panko breadcrumbs. Repeat for all chicken pieces.

        Make the Teriyaki Sauce: In a small saucepan over medium heat, combine soy sauce, honey (or brown sugar), rice vinegar, sesame oil, ginger, and garlic. Stir until well mixed and let simmer for 3-5 minutes. Then, stir in the cornstarch mixture. Continue to cook until the sauce thickens, about 2 minutes. Remove from heat and set aside.

          Fry the Chicken Bites: In a large skillet or deep fryer, heat oil over medium-high heat. Once the oil is hot (about 350°F / 175°C), carefully add the breaded chicken bites in batches, avoiding overcrowding. Fry for 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.

            Toss in Teriyaki Sauce: In a large mixing bowl, add the cooked chicken bites and pour over the prepared teriyaki sauce. Toss gently to coat all the pieces evenly.

              Serve: Transfer the teriyaki chicken bites to a serving plate. Garnish with sesame seeds and sliced green onions for a fresh touch. Enjoy immediately!
