2 pounds baby Yukon gold potatoes

6 cloves garlic, minced

1/4 cup olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon dried rosemary (or fresh if available)

1 teaspoon paprika

Fresh parsley, chopped for garnish

Preheat the Oven: Start by preheating your oven to 450°F (232°C). This high temperature is key to achieving that crispy texture.

    Boil the Potatoes: In a large pot, add the baby Yukon gold potatoes and fill with enough water to cover them. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender but not falling apart.

      Prepare the Garlic Oil: In a small bowl, whisk together the olive oil, minced garlic, sea salt, black pepper, dried rosemary, and paprika. Set aside, as this will infuse the potatoes with flavor.

        Smash the Potatoes: Drain the boiled potatoes and let them cool slightly. On a baking sheet lined with parchment paper, place the potatoes apart from each other. Using the bottom of a glass or a potato masher, gently smash each potato until they are flattened but still intact.
