Crispy Rice Paper Spring Rolls

10 rice paper sheets

1 cup cooked shrimp, chopped (or tofu for a vegetarian option)

1 cup bean sprouts

1 cup julienned carrots

1 cup red bell pepper, finely sliced

1/2 cup fresh cilantro, chopped

1/2 cup vermicelli noodles, cooked

1/4 cup mint leaves, chopped

1 tablespoon soy sauce

1 tablespoon sesame oil

Salt and pepper to taste

1 cup breadcrumbs (for crispiness)

Vegetable oil (for frying)

Instructions
 

Prep the Filling: In a large mixing bowl, combine the chopped shrimp (or tofu), bean sprouts, carrots, red bell pepper, cilantro, vermicelli noodles, mint leaves, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly coated.

    Soak the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds or until it becomes soft and pliable. Carefully remove and lay it flat on a clean surface.

      Add the Filling: Spoon a generous amount of the filling mixture onto the bottom third of the rice paper, leaving a couple of inches on the sides.

        Rolling Up: Fold the sides of the rice paper over the filling, then gently roll from the bottom upwards to enclose the filling tightly. Make sure to seal the edges by pressing them together.

          Coat with Breadcrumbs: Once all spring rolls are rolled, dip each roll in a plate of breadcrumbs, ensuring they are well-coated for an extra crispy texture.

            Heat the Oil: In a large skillet or frying pan, heat about an inch of vegetable oil over medium-high heat until shimmering.

              Fry the Rolls: Carefully place the spring rolls in the hot oil, a few at a time, without overcrowding the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.

                Drain and Serve: Remove the fried spring rolls from the oil and place them on a paper towel-lined plate to absorb excess oil. Serve hot with dipping sauces like sweet chili sauce or hoisin sauce.
