Crispy Potsticker Salad with Zesty Sesame Dressing

For the Potstickers:

1 package (about 12-15) frozen potstickers (chicken, pork, or vegetable)

2 tablespoons vegetable oil

1 cup shredded carrots

1 cup shredded red cabbage

1 cup edamame, shelled

½ cup sliced green onions

¼ cup fresh cilantro, chopped

For the Zesty Sesame Dressing:

¼ cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

1 clove garlic, minced

1 teaspoon sriracha (optional, for heat)

1 tablespoon toasted sesame seeds

For Garnish:

Additional sesame seeds

Extra chopped cilantro

Lime wedges

Cook the Potstickers:

    Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the frozen potstickers in a single layer and cook for about 2-3 minutes or until the bottoms are golden brown. Add about ½ cup of water to the pan, cover with a lid, and steam for another 5-7 minutes until cooked through. Remove the lid and let any remaining water evaporate, cooking for an additional minute to crisp up. Set aside.

      Prepare the Salad Base:

        In a large bowl, combine the shredded carrots, shredded red cabbage, edamame, sliced green onions, and fresh cilantro. Toss to combine evenly.

          Make the Zesty Sesame Dressing:

            In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and sriracha (if using). Stir in the toasted sesame seeds and set aside.

              Assemble the Salad:
