Crispy Panko Shrimp with Dipping Sauce

For the Shrimp:

1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ tsp garlic powder

½ tsp paprika

½ tsp salt

½ tsp black pepper

Oil for frying (vegetable or canola)

For the Dipping Sauce:

½ cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp lime juice

1 tsp sriracha (adjust to taste)

1 tsp chopped fresh cilantro (optional)

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. This helps the coating stick better.

    Set Up Breading Station: In three separate shallow bowls, set up your breading station:

      - In the first bowl, add the flour mixed with ½ tsp of salt and ¼ tsp of black pepper.

        - In the second bowl, beat the eggs until smooth.

          - In the third bowl, combine panko breadcrumbs, garlic powder, paprika, and remaining salt and pepper.

            Coat the Shrimp: Take each shrimp and first dredge it in the flour, shaking off excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the shrimp with the panko mixture, pressing gently to ensure an even coating.

              Heat the Oil: In a large skillet, pour enough oil to cover the bottom (about ½ inch deep) and heat it over medium-high heat. To check if the oil is hot enough, drop a small piece of bread into the oil; if it sizzles immediately, it's ready.

                Fry the Shrimp: Carefully add the coated shrimp to the hot oil in batches (don’t overcrowd the pan). Fry until golden brown and crispy, approximately 2-3 minutes per side. Use a slotted spoon to remove the shrimp and place them on a paper towel-lined plate to drain excess oil.

                  Make the Dipping Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, lime juice, and sriracha. Stir in the chopped cilantro if using. Adjust spiciness by adding more sriracha if desired.

                    Serve: Arrange the crispy panko shrimp on a serving platter and serve hot with the dipping sauce on the side.
