For the Chicken:

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

Vegetable oil, for frying

For the Honey Sauce:

1/2 cup honey

1/4 cup soy sauce

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional, for a little heat)

1 tablespoon chopped green onions, for garnish

Sesame seeds, for garnish

Instructions
 

Prepare the Chicken:

    - In a large bowl, combine the flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper. Mix well.

      - Dip each piece of chicken into the beaten eggs, allowing the excess to drip off. Then coat the chicken thoroughly in the flour mixture. Set aside on a plate.

        Fry the Chicken:

          - Heat about 1 inch of vegetable oil in a deep skillet or wok over medium-high heat. The oil is ready when it reaches 350°F (175°C).

            - Carefully add the coated chicken pieces in batches, making sure not to overcrowd the pan. Fry for 6-7 minutes or until golden brown and crispy, turning occasionally.

              - Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil.

                Make the Honey Sauce:

                  - In a small saucepan over medium heat, combine the honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes. Stir and bring to a simmer.

                    - Allow the sauce to simmer for 3-4 minutes until slightly thickened. Remove from heat.

                      Combine Chicken and Sauce:

                        - In a large mixing bowl, pour the hot honey sauce over the crispy chicken. Gently toss to coat the chicken evenly in the sauce.

                          Serve:

                            - Transfer the honey-coated chicken onto a serving platter. Garnish with chopped green onions and a sprinkle of sesame seeds.

                              - Serve immediately while hot and crispy, alongside steamed rice or your favorite vegetable stir-fry.
