Crispy Gouda and Apple Grilled Cheese

4 slices of sourdough bread

1 cup aged Gouda cheese, shredded

1 medium apple (such as Granny Smith or Honeycrisp), thinly sliced

2 tablespoons unsalted butter, at room temperature

2 teaspoons honey

1 teaspoon Dijon mustard

Salt and freshly cracked black pepper, to taste

Optional: Fresh arugula for an added peppery bite

Prepare the Spread: In a small bowl, mix together the room temperature butter, honey, and Dijon mustard until smooth and well combined.

    Assemble the Sandwich: Take two slices of sourdough bread and spread the honey-Dijon mixture on one side of each slice. On the unspread side, layer half of the shredded Gouda, followed by a few apple slices, a sprinkle of salt and pepper, and then the remaining Gouda. Top with the second slice of sourdough, placing the spread side out.

      Heat the Pan: Preheat a skillet or griddle over medium heat. You want it hot enough to toast the bread but not so hot that it burns.

        Cook the Sandwich: Place the assembled sandwich in the skillet. Cook for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip the sandwich using a spatula. Cook the other side for another 3-4 minutes, pressing down gently to help the cheese melt and the bread crisp up, until both sides are golden brown.

          Serve: Once the sandwich is nicely browned and the cheese is melted, remove it from the skillet. Let it rest for a minute before slicing it in half. Optionally, serve with fresh arugula on the side for a burst of freshness.
