4 large russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: 1/2 teaspoon red pepper flakes (for a spicy kick)

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Potatoes: Wash and scrub the russet potatoes. Cut them into 1/4 inch thick fries. You can leave the skin on for added texture and flavor.

      Soak the Fries: Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and will lead to crispier fries.

        Drain and Dry: After soaking, drain the fries and pat them dry thoroughly with a kitchen towel. It’s important to remove as much moisture as possible.

          Season the Fries: In a large mixing bowl, toss the dried fries with olive oil, minced garlic, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure the fries are evenly coated.

            Parmesan Preparation: In a separate bowl, mix the grated Parmesan cheese with a little more garlic powder if desired and set aside.

              Bake the Fries: Spread the seasoned fries in a single layer on a large baking sheet lined with parchment paper, making sure they aren’t overcrowded. Bake in the preheated oven for 25-30 minutes, flipping halfway through for even cooking.

                Add Parmesan: After about 20 minutes of baking, pull the fries out of the oven, sprinkle the Parmesan cheese evenly over the top, and return to the oven for an additional 5-10 minutes, or until the cheese is melted and the fries are golden brown and crispy.
