Crispy Garlic Herb Salmon with Roasted Veggies

For the Salmon:

4 salmon fillets (6 oz each)

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon lemon zest

2 tablespoons olive oil

Salt and pepper to taste

Lemon wedges for garnish

For the Roasted Veggies:

2 cups broccoli florets

2 cups bell peppers, sliced (mix of red, yellow, and green)

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large bowl, combine the broccoli, bell peppers, and cherry tomatoes. Drizzle with 1 tablespoon of olive oil, and sprinkle with garlic powder, dried oregano, salt, and pepper. Toss to coat evenly.

      Roast the Vegetables: Spread the seasoned veggies on a large baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized, flipping halfway through.

        Prepare the Salmon: While the veggies are roasting, combine the minced garlic, chopped parsley, chopped dill, lemon zest, 2 tablespoons of olive oil, salt, and pepper in a small bowl to make the herb mixture.

          Sear the Salmon: Heat a non-stick skillet over medium-high heat. Add a drizzle of olive oil. Once hot, carefully place the salmon fillets skin-side down in the skillet. Cook for 2-3 minutes until the skin is crispy.

            Add the Herb Mixture: Carefully flip the salmon fillets. Immediately spoon the garlic herb mixture evenly over the top of each fillet. Continue to cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
