When it comes to cooking steak, achieving that perfect sear is essential. This process is rooted in the Maillard reaction, a complex chemical reaction between amino acids and reducing sugars that occurs when food is cooked at high temperatures. This reaction is responsible for creating the rich, savory flavors and appealing browning on the surface of your steak bites.

Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme leaves

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Steak: Pat the steak cubes dry with paper towels to remove excess moisture. This helps to achieve a nice, crispy sear. Season the cubes with salt, pepper, and smoked paprika, ensuring they are evenly coated.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

Sear the Steak: Carefully add the seasoned steak cubes to the pan in a single layer (do it in batches if necessary). Sear them for about 2-3 minutes without moving them, allowing a golden-brown crust to form.

Flip and Cook Further: Once the first side is crispy, flip the steak bites and cook for another 2-3 minutes until browned on all sides and cooked to your preferred doneness (medium rare is recommended).

Add Garlic and Herbs: Reduce the heat to medium. Push the steak bites to one side of the skillet. Add the butter, minced garlic, rosemary, and thyme to the empty side of the skillet.

Infuse the Flavor: As the butter melts, use a spoon to baste the steak bites with the melted garlic butter 2-3 times. This will enhance the garlic flavor and keep the steak bites juicy. Cook for an additional minute.

Remove and Garnish: Remove the skillet from heat and transfer the garlic butter steak bites to a serving platter. Drizzle any leftover garlic butter from the skillet over the top and sprinkle with fresh parsley for garnish.

Serve: Serve immediately while hot, pairing these delicious bites with your favorite dipping sauces or side dishes.
