2 medium-sized eggplants

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (optional)

1/2 cup marinara sauce (for dipping)

Fresh basil leaves, for garnish

Olive oil, for frying

4 crusty sandwich rolls or ciabatta buns

1 cup fresh mozzarella cheese, sliced

Instructions
 

Prepare the Eggplants: Slice the eggplants into 1/2-inch thick rounds. Lay them on a paper towel, sprinkle both sides with salt, and allow them to sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.

    Set Up Breading Station: In three separate shallow dishes, place the flour in the first, beat the eggs in the second, and combine the breadcrumbs, garlic powder, onion powder, paprika, salt, pepper, and grated Parmesan cheese in the third.

      Bread the Eggplant Slices: Take each eggplant slice, dredge it in the flour, shaking off excess, dip it in the beaten eggs, then coat it well with the breadcrumb mixture. Press the breadcrumbs onto the eggplant to ensure they stick.
