1 lb fresh spinach, cleaned and trimmed

1/2 cup cream cheese, softened

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (plus extra for coating)

1/4 cup finely chopped onion

2 cloves garlic, minced

1/2 tsp nutmeg

Salt and pepper to taste

1 large egg, beaten

Blanch the Spinach: Bring a large pot of salted water to boil. Add the spinach and cook for about 2 minutes until just wilted. Drain and immediately plunge into a bowl of ice water to stop the cooking. Once cooled, squeeze out as much water as possible and chop finely.

    Prepare the Mixture: In a large mixing bowl, combine the cooked spinach, cream cheese, ricotta cheese, grated Parmesan cheese, breadcrumbs, chopped onion, minced garlic, nutmeg, salt, and pepper. Mix until well combined.
