2 cups of cottage cheese

1 cup of breadcrumbs (preferably panko for extra crispiness)

1/2 cup grated Parmesan cheese

1 medium-sized zucchini, grated

1 large egg

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (optional)

Oil for frying (vegetable or olive oil)

Prepare the Mixture: In a large mixing bowl, combine the cottage cheese, grated zucchini, grated Parmesan cheese, minced garlic, dried oregano, salt, and black pepper. Mix well until all ingredients are incorporated.

    Add Boundaries: Beat the egg in a separate bowl and then add it to the cottage cheese mixture. Stir until well combined.

      Coat with Breadcrumbs: Place the breadcrumbs in a shallow dish. Take a scoop of the cottage cheese mixture (about 2 tablespoons), form it into a small patty or ball, and then roll it in the breadcrumbs until fully coated. Repeat with the remaining mixture.

        Fry the Treats: In a large skillet, heat about 1/4 inch of oil over medium heat. Once hot, carefully place the coated cottage cheese patties in the skillet. Fry them in batches, making sure not to overcrowd the pan, for about 3-4 minutes on each side or until golden brown and crispy.
