1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

4 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ red onion, thinly sliced

¼ cup feta cheese, crumbled (optional)

Fresh parsley or cilantro, for garnish

For the avocado dressing:

1 ripe avocado

2 tablespoons lime juice

1 clove garlic, minced

2 tablespoons fresh cilantro (optional)

3 tablespoons water (more for desired consistency)

Salt and pepper to taste

Instructions
 

Prepare the crispy chickpeas:

    - Preheat your oven to 400°F (200°C).

      - In a bowl, toss the drained chickpeas with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.

                  Assemble the salad:

                    - In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
