Ingredients

1 lb (450g) chicken breast, cut into strips

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for heat)

1 teaspoon salt

1/2 teaspoon black pepper

Vegetable oil (for frying)

For the Honey Mustard Dip:

1/3 cup Dijon mustard

1/3 cup honey

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, soak the chicken strips in buttermilk for at least 30 minutes (or up to overnight in the fridge) to tenderize and flavor the meat.

Prepare the Breading Mix: In a separate large bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. In another bowl, place the panko breadcrumbs.

Bread the Chicken: Remove chicken strips from the buttermilk and let the excess drip off. Then, dredge each strip first in the seasoned flour mixture, shaking off the excess, then dip into the panko breadcrumbs, pressing lightly to ensure the breadcrumbs adhere well.

Fry the Chicken: Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once hot (test by dropping a breadcrumb in; it should sizzle), carefully add the chicken strips in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, until golden brown and cooked through. Remove and drain on paper towels.

Make the Honey Mustard Dip: In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, and add salt and pepper to taste. Adjust the honey or mustard to your liking for sweetness or tanginess.

Serve: Plate the crispy chicken tenders hot alongside a small bowl of honey mustard dip for dipping.
