Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper

Salt and pepper, to taste

Oil, for frying

For the Easy Avocado Salsa:

2 ripe avocados, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 lime, juiced

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

Shredded lettuce

Crumbled queso fresco (optional)

Lime wedges, for serving

Instructions

Marinate the Chicken:

    - In a bowl, add the chicken thighs along with buttermilk. Cover and refrigerate for at least 1 hour or up to overnight to tenderize the meat.

      Prepare the Coating:

        - In a separate bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.

          Fry the Chicken:

            - Heat oil in a large skillet over medium-high heat. Once hot, remove the chicken from the marinade, letting excess buttermilk drip off. Dredge it in the flour mixture, ensuring it's fully coated.

              - Carefully place the coated chicken into the hot oil. Fry for 4-5 minutes on each side until golden brown and cooked through. Remove and place on a paper towel-lined plate to absorb excess oil.

                Make the Easy Avocado Salsa:

                  - In a medium bowl, combine the diced avocados, tomato, red onion, lime juice, and cilantro. Gently toss to combine. Season with salt and pepper to taste.

                    Assemble the Tacos:

                      - Warm the tortillas in a skillet or microwave. Lay a generous amount of shredded lettuce on each tortilla, top with crispy chicken pieces, and add a spoonful of avocado salsa. Sprinkle with queso fresco if desired.

                        Serve:

                          - Serve the tacos with lime wedges on the side for an extra burst of flavor. Enjoy your Crispy Fiesta Chicken Tacos with Easy Avocado Salsa!
