Crispy Chicken Taco Bites

1 pound ground chicken

1 cup shredded cheddar cheese

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup finely chopped onion

1 clove garlic, minced

1 tablespoon taco seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 large egg

12 mini flour tortillas

Cooking spray or oil for frying

Optional toppings: diced tomatoes, shredded lettuce, sour cream, guacamole, salsa

Instructions
 

Prep the Chicken Mixture: In a large mixing bowl, combine the ground chicken, shredded cheddar cheese, breadcrumbs, chopped onion, minced garlic, taco seasoning, salt, black pepper, and egg. Mix well until all ingredients are thoroughly combined.

    Shape the Bites: Using your hands, take about 1 tablespoon of the chicken mixture and form it into small, bite-sized balls. Repeat until all the mixture is shaped.

      Preheat the Oven: Preheat your oven to 400°F (200°C). If you're frying, you can skip this step.

        Cook the Chicken Bites: If baking, line a baking sheet with parchment paper, then place the chicken bites on the sheet. Spray lightly with cooking oil. Bake for 15-20 minutes or until golden brown and cooked through. For frying, heat oil in a skillet over medium heat and fry the bites for about 4-5 minutes on each side until crispy and cooked through.

          Warm the Tortillas: While the chicken bites are cooking, warm the mini tortillas in a dry skillet or microwave. This makes them pliable and easier to fill.

            Assemble the Tacos: Once chicken bites are cooked, place a few into each tortilla. Top with your choice of diced tomatoes, lettuce, sour cream, guacamole, or salsa.
