2 large chicken breasts, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Vegetable oil, for frying

4 large tortilla wraps (flour or whole wheat)

1 cup shredded romaine lettuce

1 cup diced tomatoes

½ cup shredded cheddar cheese

½ cup ranch dressing

Optional: sliced jalapeños for a spicy kick

Marinate the Chicken: Place the chicken breasts in a large bowl and pour the buttermilk over them. Cover and refrigerate for at least 30 minutes to an hour. This helps to tenderize the chicken and adds flavor.

    Prepare the Breading Station: In one shallow dish, mix together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In a second shallow dish, place the panko breadcrumbs.

      Bread the Chicken: Remove the marinated chicken from the buttermilk, allowing excess marinade to drip off. Dredge each chicken breast in the flour mixture, then dip it back into the buttermilk, and finally coat it well with panko breadcrumbs. Press gently to ensure the breadcrumbs stick.

        Fry the Chicken: In a large skillet, heat about ½ inch of vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for 4-5 minutes per side, or until the chicken is golden brown and has an internal temperature of 165°F (74°C). Remove the chicken from the skillet and place on a paper towel-lined plate to absorb excess oil.

          Slice the Chicken: Once the chicken is cool enough to handle, slice it into strips suitable for wrapping.

            Assemble the Wraps: Lay a tortilla flat on a clean surface. Begin by spreading a generous drizzle of ranch dressing down the center. Layer with shredded romaine lettuce, diced tomatoes, sliced chicken, and shredded cheddar cheese. If you like it spicy, add sliced jalapeños.

              Wrap It Up: Fold the sides of the tortilla over the filling, then roll tightly from the bottom up to enclose the filling completely. Repeat with the remaining tortillas and filling.
