Crispy Chicken Caesar Tacos

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp salt

½ tsp black pepper

½ tsp cayenne pepper (optional)

1 cup panko breadcrumbs

8 small corn or flour tortillas

2 cups romaine lettuce, chopped

½ cup Caesar dressing

¼ cup grated Parmesan cheese

Freshly cracked black pepper, to taste

Fresh parsley, for garnish (optional)

Lemon wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs and buttermilk. Ensure the chicken is fully submerged. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum tenderness.

    Prepare the Breading: In a shallow dish, mix the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using). In another shallow dish, place the panko breadcrumbs.

      Bread the Chicken: Remove the marinated chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, coating fully, then dip back into the buttermilk before rolling in the panko breadcrumbs to ensure a crispy texture.

        Cook the Chicken: Heat oil in a deep skillet over medium-high heat. Once hot, fry the breaded chicken thighs for about 5-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F (75°C). Remove and place on a paper towel-lined plate to drain excess oil.

          Warm the Tortillas: In a non-stick skillet, briefly warm the tortillas over medium heat for about 30 seconds on each side until pliable and slightly charred.

            Assemble the Tacos: In a large bowl, toss chopped romaine lettuce with the Caesar dressing until evenly coated. Prepare the tacos by adding a generous piece of crispy chicken to each tortilla, followed by some dressed lettuce, a sprinkle of grated Parmesan, and a crack of fresh black pepper.

              Garnish and Serve: Optionally, sprinkle fresh parsley over the tacos. Serve immediately with lemon wedges on the side for an extra zing.
