1 cup panko breadcrumbs

Prep the Zucchini: Preheat your oven to 425°F (220°C). Wash the zucchinis and slice them into 1/4-inch thick rounds. Place the slices on paper towels, sprinkle with salt, and let them sit for about 10 minutes to draw out excess moisture.

    Set Up Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, add the all-purpose flour. In the second bowl, whisk the eggs until well combined. In the third bowl, mix panko breadcrumbs, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

      Bread the Zucchini Rounds: Pat the zucchini slices dry with a clean kitchen towel. Dip each round into the flour, shake off any excess, then dip it into the egg mixture, and finally coat it with the cheese and breadcrumb mixture, pressing gently to adhere.
