1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup almond milk (or any plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Olive oil spray or vegetable oil for frying

For Spicy Aioli:

1/2 cup mayonnaise

1 tablespoon sriracha (adjust for desired spice level)

1 teaspoon lemon juice

1 clove garlic, minced

Salt to taste

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy clean-up.

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with salt, pepper, garlic powder, onion powder, and smoked paprika until evenly coated.

      Set Up Dipping Stations: In one bowl, place the flour. In another bowl, pour the almond milk. In a third bowl, add the breadcrumbs mixed with cayenne pepper for a kick.

        Bread the Cauliflower: Working in batches, dip each cauliflower floret into the flour, coating it completely, then into the almond milk, and lastly roll it in the breadcrumb mixture. Press gently to ensure the breadcrumbs adhere well.

          Arrange on Baking Sheet: Place the breaded cauliflower on the prepared baking sheet in a single layer. Lightly spray with olive oil or drizzle a tad of vegetable oil for a crispy finish.

            Bake: Bake in the preheated oven for about 25-30 minutes, turning halfway through, until golden brown and crispy.

              Prepare Spicy Aioli: While the cauliflower bakes, make the aioli by combining mayonnaise, sriracha, lemon juice, minced garlic, and a pinch of salt in a small bowl. Mix well until creamy and adjust seasoning to your preference.

                Serve: Once the cauliflower bites are golden and crispy, remove them from the oven and let them cool for a couple of minutes. Serve warm with the spicy aioli on the side for dipping.
