Ingredients

2 cups finely shredded green cabbage

1 cup grated carrots

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup all-purpose flour or chickpea flour for a gluten-free option

1/4 cup cornmeal

2 large eggs

1 teaspoon baking powder

1 teaspoon ground cumin

1/2 teaspoon paprika (smoked paprika for extra flavor)

Salt and pepper to taste

Fresh herbs (like cilantro or parsley), chopped, for garnish

Vegetable oil for frying

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded cabbage, grated carrots, chopped onion, and minced garlic. Toss them together to ensure even distribution.

Make the Batter: To the vegetable mixture, add the flour, cornmeal, eggs, baking powder, cumin, paprika, salt, and pepper. Mix everything until well combined; the batter should be thick enough to hold the veggies together but still somewhat moist.

Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep). Heat the oil over medium heat until it shimmers, about 5 minutes.

Fry the Fritters: Using a spoon or an ice cream scoop, drop spoonfuls of the batter directly into the hot oil, flattening them slightly to form patties. Fry in batches to avoid overcrowding the pan. Cook each side for 3-4 minutes or until they are golden brown and crispy.

Drain: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Repeat with the remaining batter until all fritters are cooked.

Serve: Garnish the fritters with fresh herbs and serve warm with your choice of dipping sauce, such as yogurt sauce, chili sauce, or a tangy vinaigrette.
