1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup shredded cheddar cheese (or a dairy-free alternative)

1 tablespoon lime juice

10-15 small corn or flour tortillas

Olive oil or cooking spray (for frying)

Fresh cilantro, diced avocado, and lime wedges for serving (optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the rinsed black beans, corn, cumin, chili powder, garlic powder, onion powder, salt, pepper, and lime juice. Mash the mixture lightly with a fork until it is combined but still chunky. Stir in the shredded cheese until evenly distributed.

    Warm the Tortillas: If using corn tortillas, wrap them in a damp paper towel and microwave for about 30 seconds to soften them. This step is crucial to prevent cracking when rolling. For flour tortillas, they can be used directly if they are pliable.

      Fill the Tortillas: Lay out each tortilla on a clean surface. Place 2-3 tablespoons of the black bean filling along the edge of the tortilla, then carefully roll it tightly, folding in the sides as you go to form a taquito. Repeat with the remaining tortillas and filling.

        Prepare for Frying/Baking: In a frying pan, heat about ¼ inch of oil over medium heat until shimmering. Alternatively, you can preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.

          Fry the Taquitos: If frying, carefully place the rolled taquitos seam-side down into the hot oil, frying in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels. If baking, place the taquitos seam-side down on the baking sheet, spray lightly with cooking spray, and bake for about 15-20 minutes, or until crispy and golden.
