Crispy Bang Bang Salmon Bites

1 lb salmon fillet, skinless and diced into bite-sized pieces

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs, beaten

½ tsp garlic powder

½ tsp onion powder

½ tsp paprika

Salt and pepper to taste

Vegetable oil, for frying

½ cup mayonnaise

2 tbsp sweet chili sauce

1 tsp sriracha (adjust for spice preference)

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Salmon: Start by rinsing the diced salmon under cold water and patting dry with paper towels. This helps the batter stick better.

    Season the Flour: In a shallow dish, mix the all-purpose flour with garlic powder, onion powder, paprika, salt, and pepper.

      Set Up Breading Station: In a second shallow dish, place the beaten eggs. In a third dish, add the panko breadcrumbs.

        Bread the Salmon Bites: Dredge each piece of salmon in the flour mixture, shaking off excess, then dip it into the beaten eggs, and finally coat it generously with the panko breadcrumbs.

          Heat Oil: In a large skillet, pour enough vegetable oil to cover the bottom and heat over medium-high heat until shimmering.

            Fry the Salmon Bites: Carefully place the breaded salmon bites in the hot oil (don’t overcrowd the pan) and fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel to drain excess oil.

              Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth and combined. Adjust sriracha to taste for desired heat level.

                Serve: Arrange the crispy salmon bites on a serving platter, drizzle with the bang bang sauce, and sprinkle with chopped green onions and sesame seeds for garnish.
