2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

1 cup marinara sauce (store-bought or homemade)

Fresh basil or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, and then slice each zucchini into evenly sized sticks, about 1/4 to 1/2 inch thick.

      Set Up the Breading Station: In three separate shallow bowls, prepare your breading stations:

        - Bowl 1: Add the all-purpose flour.

          - Bowl 2: In another bowl, whisk the eggs until they are well beaten.

            - Bowl 3: Combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and black pepper. Mix well.

              Bread the Zucchini: Take each zucchini stick and coat it in flour, shaking off the excess. Then dip it into the beaten eggs until fully coated. Finally, roll it in the breadcrumb mixture, pressing gently to ensure even coverage. Place the coated zucchini fries on the prepared baking sheet, making sure they are spaced apart for even baking.

                Bake: Once all zucchini fries are coated, place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the fries are golden and crispy. Turn them halfway through the baking time to ensure they bake evenly.

                  Prepare the Marinara Sauce: While the zucchini fries are baking, heat the marinara sauce in a small saucepan over medium heat until warmed through. If desired, add some fresh herbs or a pinch of red pepper flakes for added flavor.
