2 medium zucchinis, sliced into fries

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

2 large eggs

Cooking spray (or olive oil for drizzling)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice them into even, fry-like sticks (about 1/4 inch thick).

      Create the Breading Station: In one bowl, whisk together the eggs. In another bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, Italian herbs, salt, and pepper.

        Coat the Zucchini Fries: Dip each zucchini stick into the beaten eggs, making sure it's fully coated, then roll it in the breadcrumb mixture until evenly covered. Repeat this process for all zucchini fries.
