2 medium zucchinis

1 cup breadcrumbs (panko for extra crunch or regular, your choice)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 large eggs

1 tablespoon olive oil

Marinara sauce or ranch dressing (for dipping)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Zucchini: Rinse and dry the zucchinis, then cut off the ends. Slice each zucchini into quarters lengthwise, then cut them again to form fry-shaped pieces approximately 1/2 inch wide.

      Set Up Breading Station: In one shallow bowl, whisk together the eggs and olive oil until combined. In another shallow bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

        Bread the Zucchini Fries: Dip each zucchini stick first into the egg mixture, allowing excess to drip off, then roll it in the breadcrumb mixture, ensuring each piece is well-coated. Place the breaded zucchini fries on the prepared baking sheet.
