For the Crispy Tofu:

1 block (14 oz) firm tofu, pressed and drained

2 tablespoons cornstarch

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For the Stir-Fry:

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch fresh ginger, grated

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 carrot, julienned

1 zucchini, sliced

2 green onions, chopped

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 teaspoon sesame seeds (for garnish)

For the Wraps:

4 large lettuce leaves (Bibb or romaine work well)

Optional toppings: sliced avocado, cilantro, and lime wedges

Instructions
 

Prepare the Tofu:

    - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

      - Cut the pressed tofu into bite-sized cubes.

        - In a mixing bowl, combine the tofu, soy sauce, sesame oil, garlic powder, onion powder, cornstarch, salt, and pepper. Toss until the tofu is evenly coated.

          - Spread the tofu cubes out in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

            Stir-Fry the Vegetables:

              - In a large skillet or wok, heat the vegetable oil over medium-high heat.

                - Add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

                  - Add the sliced bell pepper, broccoli florets, julienned carrot, and zucchini. Stir-fry for 3-5 minutes or until the vegetables are just tender but still crisp.

                    - Pour in the soy sauce and hoisin sauce. Toss the vegetables to coat them evenly in the sauce. Add the crispy baked tofu and gently combine everything.

                      Assemble the Wraps:

                        - Lay out the large lettuce leaves on a clean surface. Spoon a portion of the stir-fry mixture onto each leaf.

                          - Top with chopped green onions, optional avocado slices, and fresh cilantro.

                            - Squeeze a little lime juice over the top for added zest.

                              Serve:
